Technical Action Specification for Knife Sharpening of Berxê Slicer
1. The technical action of the lamb slicing machine’s knife is completely opposite to that of sharpening a knife. Practice using the entire length of the knife’s skin to evenly complete the blade. You must practice how to turn the knife every time you snare to avoid cutting the knife skin.
2. If observed under a microscope with a magnification of 100 times, it can be seen that the knife edge exhibits a very thin intermittent line, such as a row of very fine and uniform serrations, which is the edge of the so-called mutton slicer.
3. Holding the knife handle in your hand, without using the knife shell, move the back of the knife back on the knife belt upwards (that is, opposite to the direction of sharpening), and then pull it back down with the back of the knife after reversing. Repeat this action to grind, usually 3-5 minutes.
